Baked Veggies: Easy Breakfast Ideas

The best part about transitioning into veganism (or at least healthy-eating) is discovering new and yummy recipes that satiates my non-vegan taste buds. And that is quite the challenge.

To be frank, eating organic/clean requires a lot of time, patience, energy and well, money. But fear not! I will be sharing yummy, lazy-proof recipes straight outta our kitchen.

Fresh, healthy and – all yours.

Here is an easy, less time-consuming breakfast recipe: Baked Veggies

Prep time: 20 – 30 mins

Ingredients:

Cauliflowers
Carrots
White Onions
Chickpeas
Green Beans (optional)
Peas
Green Chilies

Salt
Italian herbs (thyme, oregano, dried basil)
Olive Oil

Tomato/Barbecue Sauce for serving (optional)


Method:

Wash thoroughly and chop all the vegetables into thin slices of equal size. This will allow them to be well-cooked. Preheat the oven (low to medium heat) for about 10 min. Cover your baking tray with aluminium foil and evenly spread out the vegetables. Using your pastry brush, coat every pieces of with olive oil. Put the tray in the oven and take out once they have been baked. The texture should feel chewy and should take about 20 to 30 minutes. 

Toss the veggies in your bowl, sprinkle Italian herbs and serve with sauce. There you have your healthy, green baked breakfast 🥑🥦🥝
